Oumph! Mushroom Tagliatelle

Ingredients:

280g Oumph! Thyme and garlic
150g plum tomatoes
150ml vegan cooking cream
200g mushrooms
1 tsp thyme
Salt to taste
One large brown onion, diced
2 large garlic cloves, finely diced
Two handfuls of rocket
Enough tagliatelle for 4

Cooking Instructions:

Boil the tagliatelle for 2 minutes less than the recommended time on the pack.
Meanwhile, fry the onion, garlic and Oumph! Thyme and Garlic in a saucepan until the Oumph! is crispy.
Add the sliced tomatoes and sliced mushrooms until cook until soft. Season with salt and thyme.
Pour over the cream and add the pasta and rocket. Allow to simmer on a low heat for about 2 minutes.
Serve and top with some oven-roasted tomatoes and extra fresh rocket.
